I'd say:

''Shíl sí go raibh a bean chéile ag iascaireacht amach go fóill. Níor chuala sí ag teacht ar aist é''

Gaeilge go deo!

a fear céile
ar aist (at least in Standard Irish, in Ulster ar aist is OK, I think)
I'd rather expect fós instead of go fóill here.

Seo mar a bheadh agamsa:
Shíl sí go raibh a fear céile fós amuigh ag iascach.
Níor chuala sí ag filleadh é.

she thought that her husband was out fishing still. she did not hear him coming back.

I'd say (NWDonegal):

Shíl sí go rabh a fear céile amuigh ag iascaireacht go fóill. Char chualaidh sí ag pilleadh é.
