What would be the full translation of my name Gregory Hugh Hayes? I have done a little bit of research and come up with O Shea as the equivalent of Hayes in Irish...

My name come from Waterford if this is of any help.

Many thanks,

Greg

Gréagóir Aodh Ó hAodha
(GRAY-GORE, AY, O HAY-A)

I don't know where you got O'Shea as an irish version of that name.O'Shea is a completely different name, and even the version you have is the english version of the name. The irish being "Ó Sé".
