We all know about 'uisce beatha', but it would seem to me that 'whiskey' is more derived from a form more akin to 'uiskí', that is, a more modern development in speech, with the u modified to a consonant.
I think I saw 'fuiskí/fuiske' or something similar in TYI Munster edition |

"Fuisce" is just a borrowing back into Irish of "whiskey". Compare "fuip" from "whip", and "Fuig" from "Whig".
